    This flavorful Madras Curry is a rich, spicy, and tangy dish from South India, known for its bold use of spices and the unique combination of heat and tanginess. Whether made with chicken, lamb, seafood, or vegetables, this curry delivers a satisfying and aromatic meal.


    Ingredients

    For the Spice Mix (Madras Curry Powder):

    • 1 tbsp cumin seeds
    • 1 tbsp coriander seeds
    • 1 tsp black peppercorns
    • 1 tsp mustard seeds
    • 2-3 dried red chilies (adjust to taste)
    • 1/2 tsp fenugreek seeds (optional)
    • 1 tsp turmeric powder
    • 1 tsp garam masala (optional)

    For the Curry Base:

    • 2 tbsp oil or ghee
    • 1 large onion, finely chopped
    • 1 tbsp ginger-garlic paste
    • 2 tomatoes, chopped or pureed
    • 1-2 green chilies, slit (optional)
    • 1 tbsp tamarind paste (or to taste)
    • 1 tsp salt (or to taste)
    • 1/2 cup water or chicken stock (adjust for consistency)

    For the Main Ingredient:

    • 500g chicken, lamb, seafood, or vegetables (cut into pieces)
    • 1/4 cup coconut milk or yogurt (optional, for richness)

    For Garnish:

    • Fresh coriander leaves, chopped

    Instructions

    1. Prepare the Spice Mix:

      • Add your chosen meat, seafood, or vegetables to the pan. Stir well to coat in the spice mixture. Cook for 5-7 minutes (for chicken or vegetables) or 15-20 minutes (for lamb) until the meat is browned or the vegetables are tender.
    5. Simmer the Curry:

      • Add water or chicken stock to the pan and bring it to a simmer. Cover and cook on low heat for about 20-25 minutes (for chicken) or 40-45 minutes (for lamb) until the meat is tender. For seafood, cook for just 5-7 minutes.
      • If you like a creamy curry, stir in coconut milk or yogurt at this stage and cook for another 5 minutes.
    6. Adjust and Garnish:

      • Taste and adjust the seasoning with more tamarind or salt, if needed.
