    This Malabar Curry is a delicious, aromatic dish from Kerala, known for its rich coconut milk-based gravy and the perfect blend of spices.     Ingredients

    For the Spice Mix:

    • 1 tsp cumin seeds
    • 1 tsp coriander seeds
    • 1/2 tsp fennel seeds
    • 1/2 tsp black peppercorns
    • 1-2 dried red chilies (optional)
    • 1/2 tsp turmeric powder

    For the Curry Base:

    • 2 tbsp coconut oil (or regular oil)
    • 1 large onion, finely chopped
    • 1 tbsp ginger-garlic paste
    • 2 tomatoes, finely chopped or pureed
    • 2-3 green chilies, slit (optional)
    • 1 tsp mustard seeds
    • 1 sprig curry leaves
    • 1 tbsp tamarind paste or 1 small piece of tamarind (optional)
    • 1/2 tsp garam masala
    • Salt to taste
    • 1/2 cup water or fish stock (adjust for desired consistency)

    For the Main Ingredient:

    • 500g fish fillets (such as kingfish or tilapia) or prawns, cleaned and de-shelled
    • 1/4 cup coconut milk (or more, to adjust the creaminess)
    • 1 tbsp fresh lime juice (optional)

    For Garnish:

    • Fresh coriander leaves, chopped
    • Additional curry leaves for garnish

    Instructions

    1. Prepare the Spice Mix:

      • Dry roast cumin seeds, coriander seeds, fennel seeds, black peppercorns, and dried red chilies (if using) in a pan until aromatic (about 2-3 minutes).

      • Gently add the fish fillets or prawns into the pan. For fish, be careful not to break the fillets as they are delicate.
      • Add water or fish stock and bring the mixture to a simmer. Cook for 10-15 minutes (for fish) or 5-7 minutes (for prawns) until the seafood is cooked through.
    5. Add Coconut Milk:

      • Stir in the coconut milk and simmer for an additional 5-7 minutes to thicken the curry. You can adjust the amount of coconut milk depending on how creamy you want the curry.
      • If the curry is too thick, add a little more water or stock to reach your desired consistency.
