Ingredients:

  • 1 medium cauliflower (cut into florets)

  • 1/2 cup all-purpose flour
  • 1 tsp ginger-garlic paste
  • 1/2 tsp red chili powder
  • Salt to taste
  • Water (to make batter)
  • Oil for deep frying

For the Manchurian Sauce:

  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 1 bell pepper, chopped
  • 2-3 garlic cloves, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chilies, chopped (optional)
  • 2 tbsp soy sauce
  • 2 tbsp tomato ketchup
  • 1 tbsp chili sauce
  • 1 tsp vinegar
  • 1 tbsp sugar
  • 1 tbsp cornflour (mixed with water to make a slurry)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the Cauliflower:
    • Wash and cut the cauliflower into bite-sized florets. Boil them in salted water for 2-3 minutes to slightly soften, then drain and pat dry.
  2. Make the Batter:
    • In a bowl, mix cornflour, all-purpose flour, ginger-garlic paste, red chili powder, and salt. Add enough water to make a smooth batter.
  3. Fry the Cauliflower:
    • Dip the cauliflower florets into the batter, coating them evenly. Heat oil in a pan and deep fry the florets in batches until golden and crispy. Drain on paper towels to remove excess oil.
  4. Prepare the Sauce:
    • In a separate pan, heat oil and sauté the onions, bell pepper, garlic, ginger, and green chilies until soft.
    • Add soy sauce, tomato ketchup, chili sauce, vinegar, and sugar. Stir well.
    • Add the cornflour slurry and cook until the sauce thickens.
  5. Toss the Cauliflower:
    • Add the fried cauliflower to the sauce and toss gently until the florets are evenly coated.
  6. Serve:
    • Garnish with fresh coriander leaves and serve hot.
