Homemade Dakshin Special Chicken Biryani Bonless Recipe

Ingredients:

  • 1 lb boneless chicken (cut into bite-sized pieces)
  • 2 cups basmati rice
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/4 cup yogurt
  • 2 tbsp vegetable oil
  • 2 tbsp ghee (clarified butter)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder (adjust to taste)
  • 1/2 tsp saffron threads (optional)
  • 1 tbsp milk (for saffron)
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1 small cinnamon stick
  • Salt to taste
  • Fresh cilantro and mint leaves for garnish
  • 4 cups water
  • 1/2 tsp lemon juice

Instructions:

  1. Marinate the Chicken:
    • In a bowl, mix the boneless chicken pieces with yogurt, turmeric, coriander powder, cumin powder, red chili powder, garam masala, and salt.
    • Let the chicken marinate for at least 30 minutes (or longer for more flavor).
  2. Prepare the Rice:
    • Rinse the basmati rice under cold water until the water runs clear. Soak for 30 minutes.
    • Bring 4 cups of water to a boil in a pot with a pinch of salt, cardamom pods, cloves, and cinnamon stick. Add the soaked rice and cook for 10 minutes until the rice is 70% cooked. Drain the rice and set it aside.
  3. Cook the Chicken:
    • Heat oil and ghee in a large pan over medium heat.
    • Add the sliced onions and cook until golden brown and crispy. Remove half of the fried onions and set them aside for garnishing.
    • In the same pan, add the marinated chicken and cook until the chicken is tender and cooked through (about 10-12 minutes).
    • Add chopped tomatoes and cook until soft. Stir in lemon juice and adjust seasoning if necessary.
  4. Layer the Biryani:
    • In a large pot, layer the cooked chicken mixture at the bottom.
    • Then layer the partially cooked rice over the chicken.
    • If using saffron, soak the saffron threads in warm milk for 5 minutes and drizzle it over the rice for color and aroma.
    • Cover the pot with a lid and cook the biryani on low heat for 20-25 minutes (you can also use the dum cooking method by placing a heavy pan under the pot to trap steam).
  5. Garnish and Serve:
    • Garnish the biryani with the reserved fried onions, fresh cilantro, and mint leaves.
