Homemade Dakshin Special Egg Biryani Recipe

Ingredients:

  • 6 boiled eggs
  • 2 cups basmati rice
  • 2 tbsp vegetable oil or ghee
  • 2 medium onions, thinly sliced
  • 1 tomato, finely chopped
  • 1/2 cup yogurt
  • 1 tsp ginger-garlic paste
  • 2 green chilies, slit
  • 1/4 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala
  • 1/4 tsp fennel seeds (optional)
  • 1 cinnamon stick
  • 2-3 cloves
  • 2-3 green cardamom pods
  • 2 bay leaves
  • 1/2 tsp saffron threads (optional)
  • 2 tbsp warm milk (for saffron)
  • Salt to taste
  • Fresh coriander and mint leaves, chopped (for garnish)
  • 4 cups water (for cooking rice)

Instructions:

  1. Prepare the Rice:
    • Rinse the basmati rice until the water runs clear and soak for 30 minutes.
    • In a large pot, bring 4 cups of water to a boil. Add cinnamon, cloves, cardamom pods, bay leaves, and salt.
    • Add the soaked rice and cook until it’s 70% done. Drain and set aside.
  2. Prepare the Eggs:
    • Peel the boiled eggs and make small slits on them to allow the spices to penetrate.
    • Heat 1 tbsp oil in a pan, add turmeric powder and a pinch of salt. Lightly fry the eggs for 2-3 minutes. Remove and set aside.
  3. Cook the Masala:
    • In the same pan, heat the remaining oil or ghee. Add sliced onions and sauté until golden brown.
    • Add ginger-garlic paste and green chilies. Sauté until the raw aroma disappears.
    • Add chopped tomatoes, yogurt, red chili powder, coriander powder, cumin powder, and salt. Cook until the tomatoes soften and the oil separates.
    • Add garam masala and mix well. Gently toss the fried eggs in this masala, ensuring they are coated evenly.
  4. Layer the Biryani:
    • In a large pot, layer half of the cooked rice at the bottom.
    • Spread the egg masala mixture over the rice layer.
    • Add the remaining rice on top. If using saffron, soak it in warm milk and drizzle it over the rice.
    • Garnish with chopped coriander and mint leaves.
  5. Cook on Dum:
    • Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes, allowing the flavors to blend.
  6. Serve:
    • Gently fluff the biryani and serve hot with raita, pickle, or a fresh salad.
