Homemade Dum Biryani Vegetable Recipe

Ingredients

  • For Rice:
    • 2 cups basmati rice
    • 4 cups water
    • 1 bay leaf
    • 2 green cardamom pods
    • 2 cloves
    • 1 cinnamon stick
    • 1 tsp cumin seeds
    • Salt to taste
  • For Vegetable Masala:
    • 2 tbsp vegetable oil or ghee
    • 1 tsp cumin seeds
    • 1 medium onion, finely sliced
    • 1 tsp ginger-garlic paste
    • 2 medium tomatoes, chopped
    • 1 cup mixed vegetables (carrots, beans, peas, potatoes, cauliflower)
    • 1/2 cup yogurt (optional for creaminess)
    • 1/2 tsp turmeric powder
    • 1 tsp red chili powder (adjust to taste)
    • 2 tsp biryani masala
    • Salt to taste
  • For Layering:
    • 1/2 cup fresh coriander leaves, chopped
    • 1/2 cup fresh mint leaves, chopped
    • 1/4 tsp saffron strands soaked in 2 tbsp warm milk
    • 2 tbsp fried onions (birista)
    • 2 tbsp ghee

Instructions

  1. Prepare the Rice:
    • Wash and soak the basmati rice for 30 minutes.
    • Bring water to a boil with bay leaf, cardamom, cloves, cinnamon, cumin seeds, and salt.
    • Add the rice and cook until 70% done. Drain and set aside.
  2. Cook the Vegetable Masala:
    • Heat oil or ghee in a large pan. Add cumin seeds and let them splutter.
    • Add sliced onions and sauté until golden brown.
    • Stir in ginger-garlic paste and cook until fragrant.
    • Add tomatoes and cook until soft and the oil separates.
    • Add the mixed vegetables, turmeric, red chili powder, biryani masala, and salt. Mix well.
    • If using yogurt, stir it in now and cook until the vegetables are tender but not mushy.
  3. Layer the Biryani:
    • In a heavy-bottomed pot, spread a layer of vegetable masala.
    • Add a layer of partially cooked rice.
    • Sprinkle some coriander, mint, and fried onions. Drizzle a bit of saffron milk and ghee.
    • Repeat the layers, finishing with rice on top.
  4. Seal and Dum Cook:
    • Cover the pot tightly with a lid or seal with dough to trap the steam.
    • Place on low heat for 20-30 minutes to allow the flavors to meld.
  5. Serve:
    • Gently mix the layers before serving to retain the vibrant colors and textures.
    • Pair with raita, salan, or a fresh salad for a complete meal.
