What is Methi – Fenugreek?
Methi (Fenugreek) is a herb commonly used in Indian and Middle Eastern cuisines, known for its distinctive, slightly bitter taste and aromatic leaves. The leaves, often referred to as methi, are used fresh or dried in various dishes, while the seeds, called fenugreek seeds, are also widely utilized for their intense flavor and health benefits.
The leaves are commonly added to curries, dals (lentil soups), parathas (flatbreads), and even in salads, imparting a unique, earthy flavor. Fenugreek seeds are used in spice blends, pickles, and also in medicinal practices due to their reputed health benefits, such as improving digestion, reducing inflammation, and managing blood sugar levels.

- 1 tbsp oil or ghee
- 1 tsp cumin seeds
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 2 green chilies, slit
Spices:
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp red chili powder (adjust to taste)
- 1/2 tsp garam masala
- 1/2 tsp cumin powder
- Salt to taste
For Creaminess:
- 1/4 cup yogurt or 2 tbsp fresh cream (optional)
- 1/4 cup water (adjust for consistency)
Optional Add-ins:
- 1 cup diced paneer, potatoes, or boiled chickpeas
Garnish:
- Fresh coriander leaves, chopped
Instructions
-
Prepare the Fenugreek Leaves:
Wash the fenugreek leaves thoroughly to remove any dirt or bitterness. Optionally, sprinkle a pinch of salt on the chopped leaves, leave for 10 minutes, and then rinse to reduce bitterness further. -
Sauté the Base:
Heat oil or ghee in a pan. Add cumin seeds and let them crackle. Add onions and sauté until golden brown. -
Cook the Masala:
Add ginger-garlic paste and green chilies, sauté for a minute until fragrant. Stir in the tomato puree and cook until the oil separates from the mixture. -
Add Spices and Methi:
Mix in turmeric, coriander powder, red chili powder, and cumin powder. Add the chopped fenugreek leaves and cook for 5-7 minutes until the leaves wilt and blend with the masala. -
Add Creaminess and Optional Ingredients:
If adding paneer, potatoes, or chickpeas, stir them in now. Add yogurt or cream for a richer curry, stirring constantly to prevent curdling. Adjust the water for desired gravy consistency. Simmer for another 5 minutes. -
Finish and Garnish:
Sprinkle garam masala and stir well. Garnish with fresh coriander leaves.
Serving Suggestions:
Serve hot with steamed rice, jeera rice, roti, or paratha for a wholesome meal.
