    Homemade Shahi Korma Recipe

    A royal dish from Mughlai cuisine, Shahi Korma is a rich, creamy, and aromatic curry made with nuts, yogurt, and warm spices. It can be prepared with chicken, lamb, paneer, or vegetables for a decadent and satisfying meal.


    Ingredients

    For the Base:

    • 500g chicken, lamb, paneer, or mixed vegetables (cubed)
    • 2 tbsp oil or ghee
    • 1 large onion, finely sliced
    • 1/2 cup yogurt (whisked)
    • 1/4 cup cashews or almonds (soaked and blended into a paste)
    • 1/4 cup fresh cream
    • 2-3 tbsp golden raisins (optional)

    Spices:

    • 2-3 green cardamom pods
    • 4-5 cloves
    • 1-inch cinnamon stick
    • 1 bay leaf
    • 1 tsp ginger-garlic paste
    • 1 tsp coriander powder
    • 1/2 tsp cumin powder
    • 1/2 tsp turmeric powder
    • 1/2 tsp red chili powder (adjust to taste)
    • 1/2 tsp garam masala
    • Salt to taste

    Garnish:

    • Saffron strands soaked in 2 tbsp warm milk (optional)
    • Fresh coriander leaves, chopped

    Instructions

    1. Sauté the Onions:
      Heat oil or ghee in a deep pan over medium heat. Add cardamom, cloves, cinnamon, and bay leaf, and sauté for 30 seconds.
      Add sliced onions and sauté until golden brown. Remove half of the onions and set aside for garnish.

    2. Cook the Protein or Vegetables:
      Add ginger-garlic paste and sauté until fragrant. Add chicken, lamb, paneer, or vegetables and cook for 5-7 minutes, stirring occasionally.

    3. Blend the Flavors:
      Stir in the yogurt, one spoonful at a time, to avoid curdling. Add cashew or almond paste, coriander powder, cumin powder, turmeric powder, and chili powder. Mix well and cook for another 3-4 minutes.

    4. Simmer the Curry:
      Add 1/2 cup water and salt to taste. Cover and let the curry simmer until the protein or vegetables are fully cooked and the sauce thickens. For lamb, allow more time to tenderize.

    5. Finish with Cream:
      Stir in fresh cream and garam masala, and simmer for 2-3 minutes for a luxurious, creamy consistency.

    6. Optional Saffron Touch:
      Add saffron-infused milk for an extra layer of richness and aroma.

    7. Garnish and Serve:
      Garnish with golden raisins, fried onions, and fresh coriander leaves.
